I know it isn't really a linguistic topic, but good food is important.

I just spent the last couple of hours making a massive batch of fudge. And it’s glorious. Here’s the recipe

 

This is a simple fudge recipe using condensed milk, a can of Carnation condensed milk is 397g, but other brands can vary.

350-400g canned condensed milk 150ml (5fl oz) milk 450g (1lb) Demerara sugar 115g (4oz) butter 1. Grease and line an 18cm square baking tin. (I skip this step and just lay a sheet of baking paper out and push the fudge into shape (I tripled the ingredients though!))

2. Place all the ingredients in a large, heavy based, saucepan and using a low heat stir until the sugar has completely dissolved. It is very important to make sure all the sugar has dissolved.

Ingredients

Serves 4

· 1 1/4 cups long-grain brown rice

· 1/4 cup cornstarch

· 1 pound snow peas, trimmed and halved crosswise

· 4 garlic cloves, sliced

· 2 teaspoons fresh ginger, grated and peeled

· 3 tablespoons light-brown sugar

· 2 tablespoons soy sauce

· 1/2 teaspoon red-pepper flakes

· 2 large egg whites

· Coarse salt and ground pepper

· 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

· 2 tablespoons vegetable oil, such as safflower

Directions

1. Cook rice according to package instructions. Meanwhile, in a large bowl, stir together 1 tablespoon cornstarch and 1/2 cup cold water until smooth. Add snow peas, garlic, ginger, sugar, soy sauce, and red-pepper flakes; toss to combine, and set aside.

Ingredients 250 g butter, softened 1 cup caster sugar 2 eggs 2 tablespoons vanilla essence 3 cups self-raising flour 2 cups hundreds and thousands

We also added some red food colouring to make them pink. Wowsers!

Method Preheat fan forced oven to 190°C. Beat butter and sugar until light and fluffy. Add eggs and vanilla and mix until combined. Add flour and mix to form a dough. Put the hundreds and thousands into a bowl. Roll mixture into balls and flatten slightly. Drop one side of the biscuit into sprinkles and place on a baking tray lined with baking paper. 350g carrots 70g raisins 230g wholewheat flour 2 teaspoons of cinnamon 1 teaspoon ground ginger ½ teaspoon nutmeg 1 teaspoon bicarbonate of soda 236ml vegetable oil 170g soft brown sugar 4 eggs 2 tablespoons golden syrup Ingredients for the topping

7 oz cream cheese 2 oz softened unsalted butter 2 oz sifted icing sugar 1 teaspoon vanilla essence These quantities make a 9” round cake.

Start off by grating 12½ oz carrots and chopping 2 oz pecans. Put to one side. Sieve flour with 2 teaspoons of cinnamon, 1 teaspoon ground ginger, ½ teaspoon nutmeg and 1 teaspoon bicarbonate of soda. (Tip the bran bits left in the sieve into the mixture.) This couldn’t be more popular in this household. Every plate is clean, every time. Even better, it’s ludicrously simple.

 

Ingredients

1 cup rice

2 cups water

2 tins of mackerel in oil

1 cup of peas

 

Method

 

1. Cook the rice however you normally would. You can cook it ahead of time(I bring it to near boil then turn it turn it off/ right down for about 10 mins. Sometimes I cook it in stock, or with garlic cloves, or with bay leaves, or with saffron…You get the idea!)

2. Empty the mackerel into a frying pan – oil and all

3. Add the peas and rice and fry until it’s all cooked through.

4. Eat.

 

I feel a bit rude/patronising posting this recipe, but it’s such a success around here it was worth passing on.

Thankfully, despite Tikkabilla and CBeebies not having them on their website, I’ve tracked down THE honey biscuits recipe and here it is courtesy of Love Lucy blog (and her friend!). I now have 2 very happy children. :D

 

Honey biscuits – makes about 15

120g butter 120g sugar 1 lrg tsp honey 1 egg yoke 1 level tsp cinnamon 180g self raising flour

Beat the butter and sugar together until creamy Beat in the honey Add the egg yoke and stir in Add the cinnamon and flour and mix until you have a soft dough Shape into small balls and roll in a little caster sugar before placing on a greased baking tray (allow room for them to spread) Bake at 180 degrees c/ gas 4 for 12-15 minutes until golden brown Remove from oven and leave for a few minutes to cool Use a flan slice to loosen them before leaving to cool and harden
