This couldn’t be more popular in this household. Every plate is clean, every time. Even better, it’s ludicrously simple.

 

Ingredients

1 cup rice

2 cups water

2 tins of mackerel in oil

1 cup of peas

 

Method

 

1. Cook the rice however you normally would. You can cook it ahead of time(I bring it to near boil then turn it turn it off/ right down for about 10 mins. Sometimes I cook it in stock, or with garlic cloves, or with bay leaves, or with saffron…You get the idea!)

2. Empty the mackerel into a frying pan – oil and all

3. Add the peas and rice and fry until it’s all cooked through.

4. Eat.

 

I feel a bit rude/patronising posting this recipe, but it’s such a success around here it was worth passing on.
